Method to make Baingan ki sabji:


Step 1: To make baingan ki sabji, heat 2 tbsp oil in a pan. Then add chopped potatoes. (Peel and wash the potatoes and cut them into big pieces) Now cook the potatoes on medium flame for 4-5 minutes. We have to cook potatoes up to 50-60% here. Then take out the potatoes in a plate.

Step 2: Now heat the remaining oil, then add asafoetida, mix garlic cloves and fry for a minute on medium flame.

Step 3: Now mix finely chopped ginger, add finely chopped onion, green chili and mix it well and fry the onion till it becomes light golden.

Step 4: When the onions are fried, add finely chopped tomatoes, add salt as per taste and mix well and cover and cook on medium flame for 4-5 minutes.

Step 5: Now take the lid from the onion tomato and mix it well, then add turmeric powder, red chili powder, coriander powder, Kashmiri red chili powder, mango powder and all the spices mix well and fry it for a while.

Step 6: Then add little water and mix well and cover the spices and cook on medium flame for 2-3 minutes.

Step 7: After the spices are cooked, remove the lid and then mix the brinjal. (Wash the brinjal and cut it into big pieces) Fry the brinjal well for 2-3 minutes.

Step 8: Now add water to the brinjal and mix it well and cover the brinjal vegetable and cook it on medium flame for 2-3 minutes.

Step 9: Mix the fried potatoes in the brinjal ki sabji and mix it well with the brinjal sabji, then cover the brinjal potato sabji and cook it on medium flame for 4-5 minutes.

Step 10: Now remove the lid from the aloo baingan ki sabji and mix once, if the brinjal sabzi is too watery, cook on high flame till the water dries up.

Step 11: Baingan ki sabji is ready. Take out the brinjal sabzi in a bowl.

Keep the potatoes in water after peeling otherwise the potatoes may turn black.

Take a good look at the brinjal, the brinjal should not be pierced from anywhere. Cut the brinjal and keep it in water until the brinjal turns black.
